calming vegan pumpkin pies

these calming vegan pumpkin pies from Gabbi Sorensen might just be the cutest darn thangs we've ever seen😍

check out the recipe below and try these delicious holiday treats for yourself😋

 

for the crust:
- 1 1/4 cups oat flour
- 2 tbsp vegetable oil
- 1/4 cup chilled water
- 1/4 tsp sea salt

~ preheat the oven to 350 F
~ mix all of the ingredients together with a fork
~ roll out the dough and press into a pie plate (or small pie tins for the mini versions)
~ place into the fridge while you prepare the filling


for the filling:
- 1 can of pumpkin puree (about 2.5 cups)
- 1/4 cup coconut sugar
- 2 tbsp cornstarch
- 1 tsp pumpkin pie spice
- 1 tsp cinnamon
- 1 dropper of zadaka relief drops
- 1/4 tsp sea salt

~ blend all of the ingredients together in a blender until well combined
~ pour into the crust and bake at 350 F for about 40 mins- 1 hour
~ enjoy!
